Ingredients
1 kg of white fish (monk, flounder, eel, bream, sea bream, sea bream),
2 dcl of olive oil,
½ kg of onion,
5-6 cloves of garlic,
half a kilo of peeled tomatoes,
2 dcl of white wine,
a bunch of parsley,
1/2 dcl wine vinegar,
salt and peppercorns.
Preparation
Sauté the chopped onion in oil, add the garlic, tomatoes and salt and cook everything together for 5 minutes.
Add cleaned fish, parsley, salt, pepper and cover with wine.
Cook on a high temperature for the first 10 minutes, then reduce and cook on a moderate heat until the fish meat is soft.
It should not be mixed, but should be shaken every now and then.
It is usually served with polenta.
