Ingredients
500 g ziti pasta (long and hollow, like a straw), 450 g sugar, 6 eggs, 250 g butter, 100 g dark chocolate, 200 g finely ground walnuts, 100 g finely ground almonds, 1 tablespoon vanilla sugar, 1 teaspoon cinnamon, grated zest of 1 lemon
Crust
2 eggs, 400 g flour, pinch of salt, 100 ml olive oil, 1 tablespoon apple cider vinegar, lukewarm water if needed
Method
Put flour in a bowl, make a well in the center and pour lightly beaten eggs in the middle. Then add oil, salt and vinegar. Combine and knead. Form the dough into a ball and let it rest covered at room temperature for 1 h. In the meantime, prepare the filling. Mix ground almonds, walnuts, grated chocolate, sugar, grated lemon zest, vanilla sugar and cinnamon in a bowl. Cut the butter in small cubes and lightly beat the eggs. Cook the ziti in boiling salted water, strain them and cool them – they should be warm when combined with the filling.
Roll the dough on a lightly floured surface. Butter the mold generously and place the rolled out dough into the mold so that the bottom and sides are covered and that approximately 8 – 10 cm of the dough is hanging from the sides. The extra dough will be used to cover the filling later.
First add a layer of filling and a few cubes of butter onto the dough. Then add a layer of cooked pasta and a few tablespoons of the filling and finally some lightly beaten egg mixture. Keep repeating until you have used up all the ingredients. Finish with eggs and butter and cover with the part of the dough that was left hanging. Lightly press the dough against the filling using the palm of your hand. Coat the surface of the dough with melted butter and bake at 180 °C for 45 – 50 min. When the cake is baked and cooled, turn it onto a serving plate so that the part that was at the bottom of the baking tin is now facing upward. Sprinkle with icing sugar.
